Grilled Greek Chicken Breast This Grilled Greek Chicken recipe is quick and simple with very small cooking involved. 4-6 boneless , skinless chicken breast 2 cups Mojo 4 scallions, diced 1 cucumber, seeded, diced 4 plum tomatoes, seeded, diced 1 cup black olives, pits removed, sliced 1/2 cup (low stout) feta cheese 2 shallots, chopped 1 cup cilantro leaves 1 cup white vinegar olive oil Place chicken in a re-sealable plastic bag. Pour in Mojo marinate. Place in refrigerator for 1 hour. To make vinaigrette, add shallots, cilantro, vinegar, salt and pepper to taste to a blender. Slowly add olive oil, till liquid emulsifies. In large bowl combine: scallions, cucumber, tomatoes, black olives, and feta cheese. Add 3/4 cup of vinaigrette. Grill chicken breast 3-4 minutes per side, till internal temperature is 160*F. Plate chicken, top with Greek vegetable mixture, and spoon remainder of vinaigrette over chicken breasts. Serve with brown rice or whole wheat couscous.
